THE JOB:

As an Assistant Chef (Sous Chef) Restaurant, you will be responsible for quality and proper presentation.  You will also set the stage for guest experience with your welcoming smile and service.

THE DAY-TO-DAY:

Conduct training for Master Cooks, Cooks, Pantry Workers and Helpers on job responsibilities

Ensure requisitions are processed properly and placed in designated area

Label and date all products to ensure safekeeping and sanitation

Create, read, measure, and execute recipes

Maintain an exceptional menu knowledge and attention to detail with plate presentation

Ensure food quality is superior and take action to correct any irregularities

Communicate with management and service staff and address any issues or needs requested by guests and employees

Assist Executive Chef by controlling purchasing, receiving, purveyor lists and inventory of all kitchen items

Prepare and administer kitchen schedule, payroll, training, issuing discipline, and coaching

THE IDEAL CANDIDATE:

At least two years of experience in a high-volume, fine dining restaurant

Previous supervisory experience within the culinary industry

Experience managing employees under a Collective Bargaining Agreement

Knowledge and understanding of Banquet Event Orders (BEOs)

Proficient in computer skills, including cost analysis, inventory management, payroll systems, and Microsoft Office applications

Ability to work varied shifts, including weekends and holidays
