ASSISTANT MANAGER - DINING RETAIL

Position Summary:
The Assistant Manager Retail Dining Food Court manages the day to day operations of retail dining in the Ithaca College Food Court. The Assistant Manager Retail Dining Food Court provides direct working oversight for food service production and operations while on duty, including the functional supervision of full-time, part-time, and student staff in both the front of house and back of house. The Assistant Manager Retail Dining Food Court enacts conflict resolution, ensures compliance with health and safety measures, and leads all operational functions related to daily business.
Supervision:
This position reports to the Assistant Director of Retail Operations.
Responsibilities:
+ Provide direct, in-person, working supervision of retail operations in the food court while on duty.
+ Place food orders and manage daily, weekly and month end inventories.
+ Work the line in the absence of culinary staff members and cover some breaks.
+ Work alongside staff members to model safe and efficient operations and performance expectations.
+ Develop and implement a rotation of limited time offerings for both food and beverage menu items.
+ Recruit, hire, train and develop a high caliber team of student employees for both front of house and back of house positions. Constantly teaching, coaching and mentoring these valuable young adults.
+ Arrange daily operations and services to ensure employees have appropriate equipment, inventory, and resources to perform their jobs and meet goals and deadlines.
+ Monitor all systems and procedures and provide objective coaching and feedback based on operational standards, code compliance, and productivity standards.
+ Ensure employees’ adherence to food safety protocols and policies at all times.
+ Take a lead role in posting vacant positions, conducting interviews, onboarding, training, and scheduling of new employees.
+ Ensure exceptional food quality and presentation to ensure high customer satisfaction; handle inquiries and concerns immediately and effectively.
+ Track daily quantities of inventory to meet par and ordering needs; maintain daily waste logs and minimize waste; perform accurate monthly inventory tallies; manage stock rotation in assigned areas.
+ Develop and maintain an in-depth, working knowledge of all dining software solutions.
+ Ensure compliance with all federal, state, and local regulations and IC policies and procedures (e.g., quality assurance, safety, operations, personnel).
+ Develop and demonstrate multicultural awareness and cultivate an inclusive, diverse, and respectful Ithaca College community. Demonstrate civil and inclusive behavior when interacting with staff, faculty, students, and visitors to the College. Promote a flexible, collaborative, and inclusive work and living environment and engage in educational opportunities to increase awareness and understanding of diversity and inclusion.
Qualifications:
Required: Three years of previous experience managing fast-casual food service operations in a college/university setting, a restaurant, or other relevant establishment, with consistent growth in scope of work and responsibilities. Proven ability to lead a culinary team and develop a sense of pride in the kitchen. Several years of experience placing food and beverage orders and maintaining hyper accurate inventories. The ability to adhere to all food safety and service standards set by Ithaca College Dining Services staff. Strong interpersonal and communication skills and the ability to provide excellent customer service while working effectively and respectfully within a diverse and inclusive environment. The Assistant Manager Retail Dining Food Court may be required to obtain food safety certification upon hire and be required to drive various vehicles on and off-campus and complete Ithaca College driver’s clearance process upon hire.
Work Environment:
The Assistant Manager Retail Dining Food Court completes work within an accessible, safe, indoor, and occasional outdoor environment. Extended periods of walking, standing, bending, and carrying moderately heavy items (up to 50 pounds) may be necessary. The Assistant Manager/Sous Chef – Retail Dining Food Court will be issued and/or required to wear slip-resistant shoes. The Assistant Manager/Sous Chef – Retail Dining Food Court will be required to work overtime, nights and weekends, and various holidays as needed.
This position is 40 hours per week, 52 weeks per year.
