Role Responsibilities:
Role Overview:
The Assistant Manager - Fermentation & Distillation will be responsible for overseeing the day-to-day operations of fermentation, distillation, and related processes at the malt spirit distillery. This position plays a crucial role in ensuring the smooth running of production activities, from raw material procurement and production planning to regulatory compliance and environmental reporting. The assistant manager will coordinate with various teams, track performance metrics, and ensure adherence to safety, quality, and efficiency standards.
Key Responsibilities:
Production Planning and Management
Develop and implement production schedules for fermentation and distillation processes.
Ensure timely availability of raw materials (yeast, enzymes, CT chemicals, caustic soda, etc.).
Monitor and manage daily production and transfer of malt spirit to maturation.
Maintain and update weekly shift schedules for the executive and contract team.
Data Management and Reporting
Manage and update Microstrategy data load (DCE) and track daily production activities.
Prepare and submit monthly Key Performance Indicator (KPI) tracker and production reports.
Update BOM (Bill of Materials), new codes, MIP, and rate routing as needed in Newgen.
Ensure the availability and timely submission of monthly Enablon data (chemical consumption, water, energy, waste, etc.) with the required evidence.
Assist in quarterly environment data assurance audits and monthly environmental meetings.
Compliance and Regulatory Reporting
Ensure accurate and timely submission of monthly excise statements and related forms.
Maintain logbooks and Codex documents, ensuring compliance with production standards.
Manage and update all environmental-related Standard Operating Procedures (SOPs) for water effluent, waste, and other related processes.
Coordinate and update refrigerant register and environmental project status reports for HO sustainability.
Environmental Management
Lead the site’s participation in water task force projects and manage water efficiency monitoring.
Support environmental metrics data updates for HO shared folders for ELT meetings.
Prepare and review reports for various environmental assessments (WASH, WBCSD, PWC-BRSR).
Coordinate the management and closure of environmental alerts.
Handle environment-related documents such as SVA, Plastic EPR, and other related projects.
Monitoring and Audits
Conduct tank calibration and ensure related documentation is updated.
Oversee calibration of equipment and resolve issues related to production processes.
Support PV audits and track stock to ensure accuracy and minimize discrepancies.
Perform bi-annual data reconciliation and ensure environmental compliance with GRMS (Environmental Incident management).
Team and Stakeholder Coordination
Manage and track team performance, including regular reviews and coordination with the team members in Malt Nashik Group Admin.
Attend monthly ELT meetings and represent the Nashik unit.
Ensure effective communication and collaboration with cross-functional teams to ensure smooth operations.
Production Tracking and Tools
Monitor and track production data using Power BI for detailed analysis and reporting.
Ensure all necessary production-related data (e.g., SAP snapshots, energy meter readings, water meter readings, etc.) is recorded and available.
Handle backflush reversal and address any related issues efficiently.
Environmental and ESG Initiatives
Support ongoing ESG (Environmental, Social, and Governance) initiatives, including progress updates and action plan implementation.
Track and report on fugitive emissions, air emissions, and environmental incidents as per GRMS standards.
Qualifications and Skills:
Education: Bachelor's degree in Chemical Engineering, Biotechnology, or a related field. A Master’s degree or certifications in environmental management or distillation processes is a plus.
Experience: Minimum 3-5 years of experience in fermentation, distillation, or related processes in the beverage or distillery industry.
Technical Skills:
Strong knowledge of fermentation and distillation operations.
Proficiency in production planning, data analysis (Power BI, Microstrategy, SAP), and reporting.
Familiarity with environmental regulations and compliance (Enablon, GRMS, BRSR, etc.).
Experience with production management software (Newgen, SAP).
