Assistant Manager - Quality Assurance (Food Safety Management)
Position Summary To assist Quality Assurance Manager to maintain and improve the food safety management system on food hygiene and food safety standard, and to increase the awareness of health and safety for FandB of Galaxy Macau.Primary Responsibility

1. Maintain the food hygiene and food safety standard for FandB of Galaxy Macau.

2. Review the effectiveness of implementation of food safety programs.

3. Conduct and co-ordinate all hygiene inspections by Macau Government.

4. Ensure kitchen operation is working according to the QA related procedure and documents.

5. Conduct training to all food handling staff in regard to basic Hygiene rules and stream food hygiene system, and health and safety to all related parties.

6. Ensure that the competence of QA team to execute daily duties.

7. Keep updating the legislation requirements or other food safety and hygiene related news. Also, apply the relevant action to Hotel and be familiar with property safety, fire, first aid and emergency procedures.

8. Conduct internal audits with both kitchen and restaurant together with the Chef de Cuisine and Outlet Manager on a regular basis and come up with suggestion of improvements.

9. Manage and conduct food vendor audits to ensure vendors are compliance to Galaxy food safety standard.

10. Plan and collect samples to external laboratory for microbiological testing. Interpret the results to management and take any corrective action accordingly.

11. Conduct health and safety inspection to improve the workplace safety. 12. Perform all other tasks and duties as assigned by management from time to time.

Requirements

- With minimum 3 years’ working experience in hospitability industry or related experience

- With solid experience in establishment of Food safety / Quality systems in a sized catering company

- With Food Science qualification or related disciplines

- Good communication skills and a good team player
