Assistant Manager Steward - Convention & Banquets - Mandalay Bay

The Assistant Manager Stewarding in Conventions will be responsible for assigned operational functions within the convention and banquet area. You will supervise dishwashing and cleaning operations, ensuring that dishes, utensils, and kitchenware are cleaned, sanitized, and stored properly. You will also participate in the training and development of stewarding staff, focusing on proper handling of equipment, chemicals, and adherence to safety protocols service.

THE DAY-TO-DAY:

Event Support: Collaborating with event organizers and other departments to support the smooth execution of conventions. This could involve setting up and arranging furniture, managing waste disposal, assisting with food and beverage service, and responding to any stewarding-related issues or emergencies that may arise during events.

Logistics and Inventory: Managing the logistics of the stewarding department, including inventory control of supplies such as cleaning materials, utensils, and equipment.

Sanitation and Hygiene: Maintaining high standards of cleanliness and hygiene, particularly in areas like kitchens and dining halls. Implementing and enforcing sanitation protocols to ensure compliance with health and safety regulations.

Safety and Compliance: Ensuring compliance with all relevant health, safety, and sanitation standards, as well as legal requirements governing food handling, waste management, and facility maintenance. Implementing procedures to mitigate risks and maintain a safe working environment for all staff and guests.

Quality Control: Conducting regular inspections and audits to assess the quality of stewarding services and identify areas for improvement. Addressing any issues or deficiencies promptly to maintain high levels of customer satisfaction.

Team Management: You would be responsible for leading and supervising a team of stewards, ensuring they are properly trained, motivated, and equipped to handle various tasks during conventions. This involves scheduling shifts, conducting performance evaluations, and providing necessary guidance and support.

WHAT YOU MUST HAVE:

2 years of prior relevant experience in Banquet and Conventions Stewarding, Kitchen Management, F&B Operations, or similar.

Work varied shifts, to include weekends and holidays

WHAT WILL MAKE YOU STAND OUT:

Relevant experience in event management, banquets, or events.

Ability to effectively manage and motivate a diverse team, fostering a collaborative and productive work environment.

Proven ability to prioritize tasks, and manage operations in a fast-paced, high-volume environment, ensuring efficiency and quality under pressure.

Experience working in large-scale resort settings, with an understanding of the complexities involved in managing multiple kitchens and large teams.

Experience managing employees using a Collective Bargaining Agreement.
