About the Role:

Four Seasons Hotel and Private Residences New Orleans is seeking an experienced Assistant Restaurant General Manager to join our dynamic Chemin a la Mer restaurant by Donald Link.

What you will do:

Select, train, evaluate, lead, motivate, coach, and discipline employees and managers in the outlet to ensure that established cultural and core standards are met.

Work closely with the Restaurant General Manager, F&B Outlets Department Heads, the Executive Restaurant Chef and Executive Pasty Chef to design an effective seasonal menus while ensuring excellent product quality at a fair price.

Control labor and operating expenses through effective scheduling, budgeting, purchasing decisions, and inventory control while focusing on creative revenue generation solutions to maximize profit.

Communicate with employees and managers to ensure operational needs are met as well as attend regular operational meetings to ensure effective coordination and cooperation between departments.

Maintain knowledge of service techniques and culinary terminology to train staff and sell products to customers and patrons.

Knowledge of systems used (POS, table management system, guest recognition, sales analysis tools, forecasting/budgeting, review of profit and loss statements)

Responsible for and drive the Marketing/PR activities and F&B promotions according to the established F&B Promotional calendar.

Work harmoniously with other colleagues across the hotel operation.

Monitor and maintain accurate POS systems menu items. Conduct periodic Micros tests to ensure accuracy of descriptions and pricing and align with menu pricing and make corrections to ensure alignment.

Assist in curation of the main wine list and wines by the glass offerings and assist in maintaining inventory.

Lead in development and execution of food and wine trainings to establish and reinforce food and wine product knowledge and monitor for standards execution.

Develop, lead and maintain controls to ensure beverage costs are in line with budgetary expectations through inventory controls and cost analysis.

What you bring:

College degree preferably specializing in hotel/restaurant management or equivalent experience is required.

5+ years of restaurant and bar background, food & beverage serving and related hospitality management.

A working knowledge of division operations.

Knowledge of food & beverage service, cost control, labor control, maintenance, merchandising, and accounting.

Ability to operate computer equipment and other food & beverage computer systems.

Reading, writing and oral proficiency in the English language

Schedule and Hours:
