**Responsibilities:**
General Purpose:
Oversees dining program for the University including day-to-day operations and procedures. Assists in establishing policies and ensuring procedures are followed. Oversees programming, scheduling, and planning for daily and operational success of the residential, retail, and catering services of the University dining program. Ensures food standards, operating efficiency levels, financial performance standards, timetables, and metrics are met and adhered to for success. Works with team members to identify operational improvement opportunities.
**Essential Functions:**
+ Plans, directs, and controls all residential and retail locations’ food and catering services and resources to meet operating and financial goals and guest needs in a multi-unit operation.Ensures all dining facilities (kitchens, serving areas, eating spaces, storage, and equipment) are in excellent working condition to support a safe and well-maintained environment for students, faculty, staff, and guests. Utilizes market-leading practices in higher education food services to help develop, direct, and implement a residential, retail, and catering services program that is progressive, competitive, measurable, and specific to the campus community. Develops responses to internal University audits related to the residential, retail, and catering services program. Conducts internal audits and initiates corrective plans if needed. Ensures staff are providing excellent customer service and promotes campus partnerships with key stakeholders.Assumes full administrative responsibility for the University dining program in the absence of leadership.
+ Assists in forecasting and developing multiple operating budgets, including revenue forecasts, food and beverage costs, labor expenses, safety, certifications, equipment, capital expenditures, and facilities maintenance. Works closely with divisional leaders and administrators to develop departmental capital plans. Ensures efficient allocation of resources and budgets assigned to residential, retail, and catering dining services to ensure activities are successfully met. Reviews and assesses progress and current operational and financial situations with departmental leadership regularly. Prepares and analyzes monthly, quarterly, and annual reports for trends and to ensure financial controls are in place.
+ Leads directs, and manages the performance of direct reports. Provides direct supervision and coaching to ensure staff are working efficiently and collaboratively as a cohesive and effective team. Enhances performance quality by setting clear standards, monitoring progress, providing feedback, and identifying training needs for direct reports, mid and lower-level leadership, and a large population of represented staff, student employees, and agency labor. Implements improvement plans, developing performance expectations for a culture of continuous growth and development, and aligning performance results with University-wide goals and objectives.
+ Assesses current skills, levels of accreditation, and training needs of departmental employees.In conjunction with other dining leaders, coordinates the development of training programs that simultaneously strengthen employee performance and enhance potential career advancement.
+ Builds and cultivates strong relationships with administrators, peers, students, and the campus community to advance the University’s interests as it relates to the residential, retail, and catering services of the University dining program. Partners with leadership and other key stakeholders to understand and analyze enrollment and food trends to enable the creation and growth of a campus-wide University dining program. Directs catering service-related activities with other University organizations and departments. As needed, works with third-party vendors and local community members to ensure the success of the strategic direction of the campus-wide University dining program and any other strategic objectives required.
+ Works with division leaders and administrators to ensure departmental consistency in the application of policies, procedures, and required food safety certifications per the University sanitarian and Monroe County Department of Health protocols.
+ In collaboration with leadership, engages in a regular review of key vendors and contracts. Assists in the initiation and management of RFP processes as warranted. Supports negotiates, and manages internal and external contracts, including but not limited to food service and retail contracts.
+ Maintains knowledge of current industry practices through association membership, training sessions, and continuing education and industry activities.

**Minimum Education & Experience:**
+ Associate’s degree in Food Service Management, Culinary Arts, or other related field and five years experience in strategic leadership within the dining or culinary services industry required.
+ or an equivalent combination of education and experience
+ Bachelor’s degreepreferred.
+ Experience in overseeing large, complex operations preferred.
+ Experience working in a self-operating dining program or environmentpreferred.
+ Experience in higher education preferred.
**Knowledge, Skills & Abilities:**
+ Strong communication and interpersonal skills required.
+ Ability to manage significantly complex projects, and design and implement new programs
+ Ability to analyze, condense, and synthesize information and provide accurate analysis and summaries required.
+ Strong organizational and problem-solving abilities required.

+ Proven strategic planning skills required.
+ Ability to exercise independent judgment and follow established protocols and procedures required.
+ Previous leadership experience, including team management required.
+ Experience working with a diverse audiencepreferred
**Licenses and Certifications:**
+ ServSafe Certification within one year of hire required.
+ AllerTrain Certification within one year of hire required.
