JOB DESCRIPTION
ResponsibilitiesThis position is responsible for assisting the Pastry Chef to ensure smooth and efficient BOH operations for the Pastry department
Essential duties include, but are not limited to:
Responsible for creation, planning and supervision of the production of top quality pastries, desserts and baked goods in a cost effective, safe mannerResponsible for daily production and supervision of the pastry shops hourly staff ensuring that recipes and standards are followed and high food quantity is prepared, while safety standards and regulations are enforcedMust be able to maintain payroll/productivity within budgeted guidelines for new desserts/pastry/bread products for all outlets and banquetsWill be required to create and recommend menu changes to the pastry chef and executive chefSupervises daily cleaning, conducts inventory of walk-in boxes and other duties such as special orders, buffet presentations and specialty menus or promotions Qualifications Culinary Degree required with a proven track record in Pastry artsTwo (2) or more years pastry cook/baker experience with at least one (1) year experience in Pastry leadership within the hospitality industry requiredMinimum three (3) years experience is required in a high volume hotel/resortMust have experience in European pastries, as well as strong grasp of current trends and presentationsCreativity with baked goods and bread production is necessaryManagement skills are required as well as oral and communication skillsProven experience working in an extremely fast paced environment with multiple functions happening simultaneously requiredMust be able to analyze Food and Beverage dataMust have been able to produce chocolate and sugar show piecesMust be able to demonstrate and deliver a high level of service to our guestsMust have strong verbal and written communication skillsMust have ability to lead and develop a cohesive culinary teamMust have strong administrative skills and computer skillsAble to interface effectively with FOH staff to produce a positive guest experience
Work Environment:
Duties and responsibilities are typically performed in the hotel and back of house of the casino, which can be faced-paced. Also, there may be times where you will need to be on the Casino Floor or pass through this area. On the Casino Floor, you may be exposed to casino-related environmental factors including, but not limited to, second hand smoke and excessive noise.While performing the duties of this job, the employee is frequently required to stand; walk; use hands to finger, handle, or feel; reach with hands and arms, talk or hear; and taste or smell. The employee must frequently lift and/or move up to 50 pounds. Specific vision abilities required by this job include close, distance, color, and peripheral vision, depth perception and ability to adjust focus.Able to work in hot environment for at least 10hr shifts
