Overview Responsible for providing consistent quality service through professional food and beverage service in the Banquet department. Carry out policies and procedures of Stonewall Resort and Benchmark Management Company. Ensure that liquor laws and liquor rules of the State of West Virginia are strictly adhered to. Ensure the beverage service policies of Stonewall Resort are strictly adhered to. Maintain the highest degree of professionalism. Ensure effective solution-oriented communication within the department and with other operating departments. Implement and execute all banquet operational and administrative systems for both food and beverage. Attain budgeted goals in areas of labor cost, expense, food and beverage costs. Have thorough knowledge of food and beverage service procedures and standards. Complete and distribute monthly forecasting, and yearly budgets for the department. Ensure effective and continuous communication with meeting/function contacts and guests. Direct and supervise both banquet F&B servers in opening duties, execution of functions and completion of closing duties. Carry out all instruction on the Banquet Event Order. Direct and assist with operational duties during functions. Ensure completion and distribution of necessary requisitions prior to a function day. Ensure completion and distribution of banquet critiques for all events. Ensure completion of necessary inventory checks, product returns and month end inventory reconciliations as requested. Schedule line staff and present for review to department manager on a weekly basis. Conduct initial interviews with prospective applicants and refer to the department manager for further review and processing. Ensures that all policies and procedures are adhered to; seek guidance of Human Resources Director and signature on form prior to administering disciplinary action to employee. Even distribution of disciplinary actions throughout department and positions under your jurisdiction. Assist with the distribution of payroll items. Assist in the initial and ongoing training of staff. Ensure a clean, safe, and orderly area, both front and back of the house, for guests and employees. Maintain lines of communication with, specifically, employees within the department and Banquet Manager. POSITION GUIDELINES Page Two POSITION TITLE: BANQUET CAPTAIN Attend and conduct all meetings as required. Monitor payroll expenses efficiently by regulating staffing levels. The flexibility to work a varied schedule due to business levels and industry demand (hotel open 7 days a week). Works flexible hours (weekends and extended eight-hour days). Knows property layout and directs guests by utilizing daily event sheets, function sheets, or other documents or reference materials. Review and understand daily event sheets and function sheets in order to properly and knowledgeably respond to any guest or coworker requests, questions, or concerns. Maintaining uniform and grooming standards as outlined in the employee handbook. Assist with the enhancement of Banquet products and revenue through the development of Theme Parties, and upgrade incentive programs to sales department. Evaluates all new hire employees on performance standards after initial employment period and annually thereafter. Evaluation forms to be completed candidly, objectively, and in a timely fashion. Offers guidance and times for areas needing improvement. LAST STATEMENT: Provide assistance in other job classification as determined necessary by immediate superior. Qualifications Minimum of one-year supervisory experience preferred. Excellent organizational, administrative, communication and leadership skills.
