Job Description Summary
The Banquet Cook position is responsible for the proper preparation and execution of food items required for all banquet events, including breakfasts, luncheons, dinners and special parties according to Sonesta standards. Perform cooking, carving and/or other buffet station duties as required.Job Description
Special Qualifications, Education, or Licenses:
Knowledge of all cooking methods and procedures necessary to direct proper production.Food Handler Certificate requiredA degree from a certified food services program, culinary school, apprenticeship, or the equivalent.Three (3) to Five (5) years of food service experience according to the needs of the operation
Essential Elements:
Ability to lift and move approximately 75 pounds.Ability to bend, squat, kneel, climb, and reach daily.Ability to perform tasks requiring sustained repetitive motion, (for example: dishing portions, carving, stirring, and chopping).Ability to move freely within the kitchen area.Ability to clean as you go in the kitchen area.Ability to stand for prolonged periods of time.Ability to work in temperature extremes.Ability to interact with guests and other employees in a courteous, empathetic, and discreet manner.Ability to read and writeNot infected by diseases transmitted through the food supply as designated by the Public Health Services. Ability to sustain direct contact with the public; must establish a high degree of customer service, (smile, eye contact, positive personal presentation, etc.), and high-volume interaction with guests and staff.Job Tasks:
Closely consults with the Executive Sous Chef on all menus, making himself aware of the mode of preparation and dish up to be applied to all items and imparts these facts to the preparation staff, working closely with Steward Department and service personnel on problems relating to them.Always checks and schedules staff to operate at peak efficiency.Understands the responsibilities of other departments/kitchen and cooperates with them. Promotes teamwork between kitchens and dining.Responsible for quality of all food prepared under this jurisdiction. Constantly checks for taste, temperature, and visual appeal. He/she makes sure that all dishes are uniform and that established portion sizes and quality are adhered to.Constantly on the alert for new products which may improve the quality of food or lower food costs or both. Review requisition before turning them into the storeroom.Comply with all hotel and departmental safety and loss control procedures.Be enthusiastic about your project and train with proper instructions. Commands are less effective; show them how to prepare or operate, as people want supervision.Attempt to strengthen knowledge of operation at all times not only pertaining to production but also management. Observe and enforce objective policies, standards, and procedures as set forth by the Executive Chef.Advance his/her knowledge and abilities and share them with others.Safeguards the confidence of workers entrusted to him.Assists in food control, that no food is wasted, and quality food are served at all times. Check all refrigerators and make certain that foods are properly rotated.Determines, on the basis of the expected volume of business, quality of food to be prepared, being careful to hold over-production or under-production to a minimum.Checks maintenance for all equipment located in his area or used in food service from the kitchen and requests immediate repairs where indicated. Makes every attempt to prevent damage or loss of hotel property.Know all cooking methods and procedures necessary to direct proper production.Read and comprehend menu terminology, high technical culinary skills.Requisition food items as needed in accordance with established procedures.Maintain cleanliness of workstation area and communicate to supervisor any maintenance needed to keep equipment in good working order.Maintain a pleasant and courteous attitude, making our customers your number one priority.To perform any other tasks as assigned by Management.Additional Job Information/Anticipated
