Banquet/Sous Chef

Deerfield Golf Club is excited to announce the exceptional career opportunity of Banquet/Sous Chef!

$60-65K BOE

Essential Responsibilities:
• Maintains quality of food product and ensures consistency in banquet food delivery and standards.
• Prepares requisitions for supplies and food items for production.
• Ensures production flow and adjusts in order to adhere to control procedures for cost and quality.
• Ensures proper receiving, storage (including temperature setting) and rotation of food products in compliance with health department regulations, including coverage, labeling, dating and placing items in proper containers in the kitchen and service stations.
• Ensures appearance of all banquet foods for proper color combination and overall presentation to maintain appeal.
• Assures that effective orientation and training are given to each new associate. Participates in ongoing training programs.
• Food prep for large scale catering events
• Responsible for ensuring that food that leaves the kitchen is of the highest quality. The Sous Chef will be responsible for ensuring that portions are correct, and the food is presented in an attractive manner.
• Adheres to established control procedures for cost and quality such as food production charts, par inventories, standardized recipes, use records and food costing sheets. Ensures that all recipes are followed and prepared on a consistent basis.
• Work from a production sheet (BEOs) provided by the Catering Sales Team
• Ensure proper equipment operation/maintenance.
• Attends culinary staff meetings and offers suggestions for improvements.
• Other tasks as assigned by the Executive Chef
• Regular and reliable attendance.

Education/Experience:
Culinary Certificate from college or technical school; or one to three years related experience and/or training; or equivalent combination and experience. Experience in managing events and personnel.

Physical Demands:
Frequently stands; walks; uses hands; talks or hears; taste or smells. Regularly reaches with hands and arms. Occasionally sits; climbs or balances; stoops, kneels, crouches, or crawls. Regularly lifts up to 50 pounds and occasionally lifts more than 100 pounds.
