Reports to the Cafe Supervisor and is responsible for assisting in all aspects of managing a quick food service & coffee shop operation, including floor management, food & beverage, equipment, and property to facilitate fulfillment of financial goals, company incentives, and client standards. Maintain a consistently high standard of guest service, sanitation, cleanliness, product presentation, and cost control. Supervise Food & Beverage line attendants, leads, and supervisors to ensure tasks are completed in a friendly, safe and efficient manner.Job Description:
ESSENTIAL FUNCTIONS
Provide training and support for unit managers and staff on point-of-sale systems, inventory system and controls, as well as food and beverage policies and procedures. Assist with the development and annual enhancements to service standards in the variety of food units.Review, propose and direct the quality of food units, address ease of traffic flow, design aesthetic and floor layout, providing direction on merchandise displays.Assist with control of food unit budgets. Monitor budgeted level of food sales, cost of sales, payroll, and controllable expenses, implementing corrective measures as needed. Inventory training, monitoring, and managing cost controls.Assist in maintaining accounting records, produce, and analyze weekly reports for accounting, GMs, operations and executive management. Utilize reports to advise upper management on business needs and potential business opportunities. Provide direction and focus to drive food revenue and profitability.Monitor, problem solve, and direct workers to ensure efficient and safe completion of all culinary tasks with strong communication to unit managers and the operation manager.Train and on-board new staff on safety and procedures including recipes and plate presentation.Sample, smell, and observe food to ensure conformance to recipes and taste and appearance standards.Communicate regularly and professionally with numerous people including general managers, colleagues and park partners.Ensure that each food operation adheres to food safety guidelines including SERV Safe and HACCP.Assist with coordination of set-up, supervision, and execution of special events.Attend and participate in management and safety meetings.Manage staff appropriately to enforce standards and minimize personnel conflicts.Assist in ensuring department records such as schedules, payroll, food safety logs, inspection logs, and receiving invoices are completed accurately and timely.Performs such other related duties as directed or required.
SKILL AND KNOWLEDGE REQUIREMENTS INCLUDE
High School Diploma/G.E.D. equivalent required; associate’s degree preferredNational Park or State Park experiences strongly preferred; six months cafeteria, barista or fast-food supervision experience strongly preferredSERV SAFE Food Safety certification or ability to obtainTIPS Alcohol training certification or ability to obtainBasic computer knowledge & ability including Microsoft Windows, Outlook, Word, Excel, and food service POS systems Mathematic skills, and knowledge of proper cash handling proceduresPHYSICAL AND MENTAL REQUIREMENTS
Moving about on foot to accomplish tasks, particularly frequent movements from place to place within the unit. Bend, lift, carry, reach/extend arms and hands above shoulder height frequently, or otherwise move in a constantly changing environment.Lifting, carrying, and pushing up to 25 lbs. regularly, 30-35 lbs. frequently, and up to 50 lbs. occasionally.Ability to stand for the entire work day and to climb steps regularly.Withstanding temperature extremes in freezer, refrigerator walk-in and grill areas.Reading and writing work-related documents in English.Speech recognition and clarity, including the ability to understand the speech of customers and co-workers and the ability to speak clearly so that you can be understood by customers and co-workers in English.Constantly communicates and receives verbal communication with other employees in fast-paced environmentEQUIPMENT USED
