THE ROLE   

The Catering Manager is an experienced leader who has a passion for organizing and delivering extraordinary events that exceed guest expectations. They are analytical people with strong work ethics and leadership skills. The Catering Manager understands that customer satisfaction is key and details matter. This role is located at The Star, Dallas Cowboys World Headquarters.

ESSENTIAL FUNCTIONS

Serve as the main point of contact for Legends during catered events and effectively communicate with other departments including Culinary, Operations, Engineering, Warehouse, IT, and Security Manage event day load-in, execution, break down and load-out. Create a positive guest experience by delivering an elevated level of service and ensuring all staff engage guests to understand their needs and exceed expectations. Partner with chef to meet clients’ expectations including menu development, tastings and communicating service standards. Communicate with event sales and planning teams to ensure events are executed as planned with clients. Oversee client vendors including building management COI required for all events. Creates banquet event orders, diagrams, estimate of charges and invoices for events. Ensure the smooth operation of all catering functions. Experience in planning plated, buffet and reception events, including fine dining service. Working knowledge of on and off premise catering Attend weekly BEO meetings and stadium event operations meetings. Liaison with Operations and Engineering team to ensure event space is well maintained.

SUPPORT FUNCTIONS

In addition to performance of the essential functions, this position may be required to perform a combination of the following supportive functions, with the time performing each function to be solely determined by the manager based upon the requirements of the company.

Create spreadsheets and documents to improve tracking and reporting of event operations.  Complete other duties as assigned by Management.

QUALIFICATIONS

To perform this job successfully, the candidate must be able to perform each essential duty above at the highest levels. The requirements listed below are representative of the knowledge, skill, and/or ability required.

Bachelor’s Degree, Hospitality Management degree preferred. Minimum of 3 years of experience preferable in premium services and catering for a sports or entertainment venue. Minimum of 2 years in a catering manager role Two (2) years of experience in a high-volume catering venue Ability to communicate effectively with other departments on behalf of the catering team. Must be able to take direction, perform essential functions and delegate responsibilities. Ability to troubleshoot and communicate effectively with clients and planning team. Must have excellent written and verbal communication skills and the ability to multi-task and prioritize in a deadline-oriented environment. Knowledge of Momentus Visio a plus Must be able to create, edit and update BEO’s. Proficiency with Microsoft Word, Outlook, Excel, PowerPoint, Dropbox, Google Sheets Must be customer service oriented with the ability to communicate with employees, vendors, client representatives and guests in a positive and professional manner. Must have exceptional knowledge of food and beverage preparations, service standards, guest relations and etiquette. Must possess strong organizational skills. Willingness to work extended hours and flexible shifts including mornings, nights, and weekends. Knowledge of the appropriate table settings, service ware and event space conversions Requires occasional lifting of up to (25) pounds in weight (boxes & equipment), standing and/or walking for extended periods at a time.
