DescriptionQualifications Minimum 5 years’ experience as a chef in a high-volume restaurant, creating high quality food products. Culinary degree preferred. License Requirements Must secure appropriate RI mandated gaming licenses. FoodSafe Certified. Essential Job Functions Schedule staff, both kitchen and dishroom, create daily specials menu. Calculation of inventory requirements. Oversee cleanliness of kitchen, refrigeration, dishroom and all other kitchen support areas. Communication with front of house staff. Ordering of all food and supplies needed, as well as costs. Hiring, firing and supervision of necessary personnel. Knowledge and compliance of all RI food codes and HACCP laws. Ensure wait staff and kitchen staff fully understand all items for sale each day, while ensuring security of kitchen after hours. Ensure all items leaving kitchen are charged for or brought to the Food Service General Kitchen Manager’s attention. Responsible for kitchen and all support staff during all hours of operation. Physical/Mental Requirements Continuous walking, talking, bending, and reaching during operating hours Frequently testing food to ensure it is up to standard. Ability to lift up to 25 lbs. Working Conditions Kitchen area, and casino floor. Working in moderate to loud noise levels in kitchen areas, as well as moving through the casino floor.
