Chef De Cuisine
Job Description The Chef De Cuisine will organize and set up the kitchen as efficiently as possible to increase speed, maximize productivity and consistency. He/she should ensure that all dishes are prepared consistently and according to standard recipes, and will assist the Executive Chef and Executive Sous Chef in ensuring that all culinary standards comply with Company and Hotel policies and procedures.
A good candidate should have at least 3 to 5 years of work experience in the same capacity and has a thorough familiarity with culinary operations. He/she should hbe knowledgeable in Western and Asian cuisine and have team leadership and positive attributes.
The Chef De Cuisine will supervise, prepare daily Mise en Place, and assures that all sections are ready for service on time. He/she will also check all storage areas daily, keep the orders to par or according to the volume of business, assume orderly handling of all products, and check the quantities prepared are according to recipes and specifications.
