Position Summary:

The Chef de Cuisine is responsible for the overall operation and profitability of the outlet, including, hiring, scheduling, training, payroll, establishing and administering service standards and outlet human resources.

Primary Duties and Responsibilities: includes but not limited to:

Manages the culinary staff, on a shift to shift basis, to ensure the service and quality of food and beveragesAssists the Executive Chef in the development of menus and conceptsWorks with various internal departments to maintain the restaurant’s kitchen equipment and supplies

Secondary Duties and Responsibilities:

Promotes the culinary concept in Marketing and Public Relations effortsMaintains good working relationships with the Food and Beverage department and Tenant Restaurant OperatorsAssists with overseeing the daily activities of the Stewarding staffMaintains the health, safety and sanitation for restaurant operations in accordance to guidelines

Minimum Education and Qualifications:

Associates’ or Culinary Degree and five years of culinary experience with three years as a Restaurant Chef  in a high volume, quality contemporary cuisine environmentIn lieu of a degree, six years of experience in a high volume, hospitality related operation will be acceptedPrevious experience in Food and Beverage administration, planning, budgeting and cost analysis

Competencies:  Incumbent will master the following competencies while in this position:

             

Excellent written and verbal communication skillsExcellent sautéing, broiling, grilling, frying, braising, roasting and baking skillsAdvanced knife skillsIntermediate knowledge in Micros, Stratton Warren, Word, Excel and Lotus NotesKnowledge of safe and efficient operation of kitchen equipmentBasic understanding of the Mohegan Sun budget processThorough understanding of the Mohegan Tribal Employment Rights Ordinance (TERO) as it relates to employment

Training Requirements:

Excellent understanding of all beverage service techniques, food preparation and products and cooking techniques, including table side serviceThorough understanding of P&L evaluation, sales forecasting, budget costs, utilization and Key Volume Indicator analysisMohegan Sun corporate and department policies and proceduresUnderstanding of health and sanitation guidelinesMust complete the Core Manager Training courseUnderstanding of Ascent and EmpowerTime

Physical Demands and Work Environment:

Fast paced kitchen environmentMust be able to lift up to 50 lbs.Must be able to stand for long periods of time with frequent lifting and bendingMust be able to work various shifts and flexible hours
