Chef de Cuisine - Sun Deck - Hotel del Coronado, a Curio Collection by Hilton

The iconic Hotel del Coronado is looking for a talented Chef de Cuisine to join their leadership team at Sun Deck! Join one of the last surviving wooden Victorian beach resorts in the world and after a $400M renovation and expansion, the resort is more stunning than ever.

Located on Coronado Island just minutes from Downtown San Diego, this 28-acre property was built in 1888 and has over 750 rooms (to include cottages and villas), 65,000 square feet of banquet space, and 10 food and beverage outlets. This includes 4 restaurants, 2 bars, food truck, marketplace, ice cream shop, and in-room dining.

The ideal candidate will be an exceptional leader with a great vision, a drive for innovation, and fosters a positive and engaging culture. At least 2-3 years of chef experience in a high-volume restaurant is required. Prior hotel and union management experience are a plus.

\nWhat will I be doing?

\n\n

As Chef de Cuisine, you would be responsible for leading the culinary production of a designated kitchen in the hotel's continuing effort to deliver outstanding guest service and financial profitability. Specifically, you would be responsible for performing the following tasks to the highest standards:

\n\n\n\tLead daily culinary production, to include, but not limited to, preparation and production of meals, food quality and presentation, compliance with all safety and sanitation standards and regulation, team member productivity and performance, cost controls and overall profitability\n\tPerform general management duties including, but not limited to, systems management, budget and forecasting, report generation, department management and meeting participation and facilitation\n\tVisually inspect, select and use quality food and beverage products including, but not limited to, fruits, vegetables, meats, fish and spices\n\tCreate and implement new menus and individual food items\n\tMonitor and develop team member performance to include, but not limited to, providing supervision and professional development, conducting counseling, and assisting with evaluations, scheduling and assigning work and delivering recognition and reward\n\tRecruit, interview, and train team members\n

Salary Range: The annual salary range for this role is $85,000 - $100,000.00 and is based on applicable and specialized experience and location.
