SFDPH strives to achieve its mission through the work of multiple divisions - the San Francisco Health Network, Population Health, Behavioral Health Services, and Administration. The San Francisco Health Network is the City’s only complete system of care and has locations throughout the City, including Zuckerberg San Francisco General Hospital and Trauma Center, Laguna Honda Hospital and Rehabilitation Center, and over 15 primary care health centers. The Population Health Division (PHD) provides core public health services for the City and County of San Francisco: health protection, health promotion, disease and injury prevention, and disaster preparedness and response. Behavioral Health Services operates in conjunction with SFHN and provides a range of mental health and substance use treatment services. The eligible list resulting from this recruitment may be utilized to fill future and current vacancies in this class at other locations within the DPH for the duration of the eligible list. Under direction, assists in the operation and supervision of a large institutional kitchen. Examples duties include + Plans, prepares, serves meals at a large commercial kitchen and operation. + Supervises subordinates during all phases of institutional kitchen operations. + Maintains quantity and quality control in all commercial kitchen operations. + Follows prescribed menus and recipes compatible with nutritional guidelines, special dietary needs, food budget, and facility equipment limitations. + Oversees preparation and cooking of all types of daily meals and food for special functions. + Ensures proper food handling, presentation, portion control, maintenance of appropriate serving temperatures, and completes all temperature logs. + Completes all freezer, cooler, cooking temperatures, warming temperatures, and sanitation logs and reports. + Researches and designs new menu plans for various food service programs and customer population, specifically focusing on current culinary trends, sustainability, and heart healthy cooking. + Coaches’ food service and production staff as assigned. + Teaches production staff basic cooking and advanced techniques as required. + Uses and maintains all kitchen equipment according to proper safety procedures and teaches these procedures to other staff members. + Maintains an up-to-date food items and recipes and train all production staff in it use. + Performs pre-service meetings and huddles with team members and completes production process by inputting postproduction numbers in reports. + Performs and supervises food purchasing, vendor contact, order placement, and delivery inspection. + Performs and supervises food supply reception, inventory, storage, and distribution. + Supervises cleaning, maintenance, and repair of kitchen equipment and utensils. + Develops and implements cleaning schedule, completes sanitation inspection and develops reports for Food and Nutrition Servies. + Inspects kitchen equipment and adjacent areas for safety and coordinates repairs. + Overseeing monitoring/compliance of refrigeration and freezer temperatures as part of a daily work routine and reporting outside temperatures, as indicated in department policy. + Ensures staff comply with all State, Federal, and Local Food Safety guidelines. + Assists in training and evaluation of subordinate staff. + Prepares and maintains daily, weekly, and monthly reports for regulatory compliance and other purposes. + Covers unscheduled staff absences during shift. + Other related duties as assigned/required. MINIMUM QUALIFICATIONS Education + Possession of a high school diploma or equivalent (GED or High School Proficiency Certificate). Experience + Four (4) years of work experience cooking large quantities of food in a setting such as hospital, correctional facility, the military, hotel, restaurant or equivalent food service establishment. + Note: Coffee shops, small grab-and-go kiosks, and sandwich shops are not considered qualifying cooking experience. + One year of fulltime employment is equivalent to 2,000 hours, based on a 40-hour work week. Experience Substitution + One (1) year of the required experience can be substituted by any of the following: + completion of a one (1) year culinary arts certificate program; or + completion of an apprenticeship program certified by a nationally recognized culinary arts organization; or + possession of an Associate Degree in Culinary Arts.
