The Carlyle, A Rosewood Hotel is looking for a highly motivated and experienced Commis to join our team as we reopen the food and beverage division within the hotel.

The Carlyle, A Rosewood Hotel is currently recruiting for a Commis. The ideal candidate will plan, prep, set up and provide quality service in all areas of food production to include, but not limited to menu items, line specials, displays/ presentations of all menu items (appetizers, entrees, side vegetable & potato dishes, sauce, stock, etc.) in accordance with standards and plating guide specifications. Maintain organization, cleanliness and sanitation of work areas and equipment.

Essential Duties and Responsibilities

·         Maintain and strictly abide by state sanitation/health regulations and hotel requirements.

·         Must be able to maintain a food preparation station as applicable to the menu it reflects with correct presentations, flavours and textures.

Working effectively with the kitchen team, and complying with company procedures and food safety policies. Preparing workstation with required ingredients and equipment, and keeping station sanitary and organized throughout the shift. Prepare all dishes following recipes and yield guides, according to department standards.Ensuring ingredients are tagged, date-labeled, covered, stored, and rotated effectively.Overseeing food levels and restocking items on time.Minimize waste and maintain controls to attain forecasted food costEstablishing stock levels at end of shift and capturing information on standardized stock sheets.Steaming vegetables and other basic cooking responsibilities.

Qualifications

·         High school diploma /GED and 2-year degree from a Culinary Arts, Hotel and Restaurant Management program preferred

Minimum two years’ experience in a similar capacity for a five-star luxury or ultra-luxury property or Michelin star restaurant.Licenses & Certifications: New York City Food Safety Certification or Equivalent Food Safety CertificationCompensation: $28.88 - $38.51
