Commis II - Butcher

The Commis II - Butcher is responsible for assisting the Chef de Partie - Butcher in ensuring the preparation and handling of meats and fish are carried out to the highest standards of quality, efficiency, and hygiene. This role involves supporting general kitchen operations, maintaining compliance with HACCP and food safety standards, and contributing to the smooth operation of the butchery section.

Duties and Responsibilities:

\n

Butchery-Specific Tasks:

\n\nPrepare all meats and fish to the highest quality and in line with company guidelines.\nEnsure effective food storage, labeling, and stock rotation to minimize wastage.\nMonitor and maintain portion sizes for meat and fish cuts.\nReport food spoilage and wastage to the Chef de Partie - Butcher.\n\n

General Kitchen Support:

\n\nWhen required, assist in the preparation of food for guests and team members efficiently, economically, and hygienically according to standard recipes.\nWork seamlessly with recipes, plating guides, and established hotel standards.\nSupport the Chef de Partie in ensuring smooth kitchen operations and prompt service.\n\n

Hygiene and Safety:

\n\nMaintain all HACCP and food safety standards, ensuring no cross-contamination.\nKeep all working areas clean, tidy, and organized.\nReport maintenance, hygiene, and hazard issues promptly.\n\n

Teamwork and Training:

\n\nCollaborate with other departments and maintain good working relationships.\nActively participate in training sessions to develop skills and adapt to changes.\nPromote good teamwork and contribute to achieving departmental goals.\n\n

Other Responsibilities:

\n\nAssist in inventory taking and managing stock levels in the butchery section.\nAttend off-site events and assist with food preparation when required.\nRespond to guest feedback effectively and positively.\nPerform additional duties and responsibilities as assigned by management.\n

Essential:

\n\nMinimum 2 years of experience as a Commis II in a high-standard kitchen or butchery environment\nBasic understanding of butchery processes and portion control.\nKnowledge of food safety and hygiene practices, including HACCP compliance.\nPositive attitude, good communication skills, and the ability to work under pressure.\nAbility to work independently or as part of a team.\nRelevant culinary or technical education preferred.\n\n

Desirable:

\n\nFood hygiene certification or equivalent.\nPrevious experience in a similar butchery role within a 5-star hotel or fine-dining restaurant.\nGood command of English, both verbal and written, to meet business needs.\n\n
