Dietary Production Coordinator

Job Summary

Ensure timely, effective, and efficient operation of kitchen and dietary services.

 

Responsibilities

• Provide coordination and daily work assignments necessary to ensure smooth workflow and efficient operation of the Nutrition Services Department. • Coordinate the preparation of specified foods in the appropriate quantities, ensuring the application of all methods of portion control and the use of approved recipes. • Ensure that all foods are ready at the appointed time in order to meet the food service schedule. • Check menus in advance for needed items, determining the quantity of food to be prepared and calculating/adjusting recipes to meet appropriate count. • Review menus with the appropriate Cooks and monitor preparation procedures and accuracy. • Update patient menus according to the daily census count. • Inspect the final product before meals are served to ensure nutritious and attractive food service, checking patient tray line. • Ensure that all foodstuffs are available for the Cooks. • Store and rotate perishable food items. • Responsible for ensuring food service when requested for special functions, preparing food for special functions of a complex, nonrepetitive nature. • Assist with the orientation and training of all Dietary personnel. • Perform opening and/or closing duties of the department. • Make schedule adjustments to cover absences or volume fluctuations. • Maintain cash controls with Cashiers, performing daily accounting procedures.

 

Knowledge, Skills & Abilities

Patient Group Knowledge (Only applies to positions with direct patient contact) The employee must possess/obtain (by the end of the orientation period) and demonstrate the knowledge and skills necessary to provide developmentally appropriate assessment, treatment or care as defined by the department’s identified patient ages. Specifically the employee must be able to demonstrate competency in: 1) ability to obtain and interpret information in terms of patient needs; 2) knowledge of growth and development; and 3) understanding of the range of treatment needed by the patients. Competency Statement Must demonstrate competency through an initial orientation and ongoing competency validation to independently perform tasks and additional duties as specified in the job description and the unit/department specific competency checklist. Perform work in accordance with all departmental pay practices and scheduling policies, including but not limited to, overtime, various shift work, and on-call situations. 7. Perform work in alignment with the overall mission and strategic plan of the organization. 8. Follow organizational and departmental policies and procedures, as applicable. 9. Perform related duties as assigned.

 

Education 

• High School Diploma or GED (Required) Experience: 1 year food service

 

Credentials 

• Food Handlers Card (Required) Within 30 days of hireWithin 30 days of hire
