Position Summary:

 This position has a pulse on the day-to-day operations of the culinary departments including, staffing, food and labor costs, budgets, service, stewarding, and sanitation standards. 

Primary Duties and Responsibilities: includes but not limited to:

Responsible for menu concepts, costs and production, training of personnel, discipline, health and sanitation standards and product specificationsAssists the Vice President of Food and Beverage in administering the departmentAssists with the yearly preparation of the operating and capital budgets

Secondary Duties and Responsibilities:

Promotes the culinary concept in Marketing and Public Relations effortsWorks with Restaurant Managers to develop training for all staff

Minimum Education and Qualifications:

Associates’ Degree, a Culinary Degree or a formal apprenticeship program and eight years of experience as an Executive Chef in a high volume, hospitality related Food and Beverage operationMust possess a thorough knowledge of culinary disciplines; Oriental, Italian, etc., and have a knowledge of various cultures and languagesMust have a thorough knowledge of cost factorsExcellent written and verbal communicationsExcellent organizational and multi-tasking skillsIntermediate knowledge of Word, Excel and OutlookIn lieu of a Degree, ten years of experience as an Executive Sous Chef and four years of supervisory experience may be considered

Competencies:  Incumbent will master the following competencies while in this position:

Knowledge of Mohegan Sun corporate and department policies and proceduresKnowledge of Mohegan Sun budget planning and analysis processEffective utilization of Mohegan Sun evaluation programsThorough understanding of the Mohegan Tribal Employment Rights Ordinance (TERO) as it relates to employment

Training Requirements:

Mohegan Sun CER and purchasing proceduresKnowledge of Ascent, EmpowerTime and Manager Self Service systems

Physical Demands and Work Environment:

Fast paced kitchen environmentMust be able to stand, lift and bend for extended periods of timeMust be able to work various shifts and flexible hours
