PRIMARY PURPOSE
Directly and ultimately responsible for meal planning, meal production, and financial productivity of Parkland foodservices. Directs and oversees Parkland culinary operations including menu and recipe development, culinary staff training and development, and maintaining the highest standards of quality food, cleanliness, organization and sanitation.
MINIMUM SPECIFICATIONS
Education:
Must have an Bachelor's degree in Culinary Arts.
Experience:
Must have eight (8) years of experience as a professional Chef in hospital foodservice, restaurant, or related institution.
Equivalent Education and/or Experience
May have an equivalent combination of education and experience to substitute for both the education and the experience requirements.
Certification/Registration/Licensure:
Must be certified as a Food Service Manager by the City of Dallas, Department of Health and Human Services OR
Certified Food Safety Manager by the National Registry of Food Safety Professionals OR
Certified ServSafe Food Safety Manager by the National Restaurant Association OR obtains one of the above certifications within one year of placement into job.
Prefer Certified Executive Chef (CEC) with the American Culinary Federation (ACF).

Skills or Special Abilities:
Must have sound general knowledge of high volume food preparation and meal services, food safety and kitchen safety.
Must be able to effectively train and supervise staff in the preparation of food items for all meal services.
Must have excellent leadership and motivational skills.
Must have excellent problem resolution skills and excellent interpersonal/listening/ communication skills.
Must be experienced and proficient in the use of basic computer technology.
Must possess analytical skills necessary to maintain financial productivity of foodservice operations.
Must meet federal, state, county and city of Dallas regulations pertaining to the service of foods and beverages.
Prefer ability to speak a second language.
Responsibilities
1. Interviews, selects, trains, motivates, evaluates and supervises all production staff in the preparation of meals for Parkland patients, employees, visitors, and catered services. Ensures that sanitary work conditions are maintained and that safe food handling and production practices are followed. Ensures that assigned employees receive training and culinary skills development opportunities to further their knowledge for personal career growth.
2. Develops and maintains production staff schedules, insuring that food production labor needs are met for all meals. Assigns work to staff based on their ability and optimum meal productivity, ensuring that department production and sanitation needs are met.
3. Identifies and analyzes methods of production, menus, recipes, tests new recipes, and evaluates new products for Nutrition Services. Maintains and ensures the integrity of recipes in Computrition data base. Implements changes to improve effectiveness, productivity and efficiency etc. that support the overall goals of the department and Parkland.
4. Maintains a positive working relationship with other departments and other Parkland personnel, vendors, regulatory personnel, and others to ensure that optimal customer service and standards of performance are achieved.
5. Responsible for meeting or exceeding financial goals set for meal service. Manages the costs of meal produced and the potential revenues for meal services.
6. Coordinates with the Buyer or Inventory Control Coordinator food and supply needs to support meal production services.
7. Develops equipment needs and submits requests to be included in the annual capital and operating budgets to ensure the food production department has the necessary tools to carry out the goals and objectives that have been established.
8. Leads and directs production staff meetings to improve the quality of meal services and employee job satisfaction. Participates in other departmental meetings related to the provision of excellent meal services for Parkland patients, café customers and catered events. May serve on hospital committees as needed.
Job Accountabilities
1. Identifies and analyzes the design of jobs, work processes, work flows, etc. for the area and implements appropriate changes to improve effectiveness, productivity, and efficiency that support the overall goals of the department and Parkland.
2. Stays abreast of the latest developments, advancements, and trends in the field by attending seminars/workshops, reading professional journals, actively participating in professional organizations, and/or maintaining certification or licensure. Integrates knowledge gained into current work practices.
3. Maintains knowledge of applicable rules, regulations, policies, laws and guidelines that impact the area. Develops effective internal controls designed to promote adherence with applicable laws, accreditation agency requirements, and federal, state, and private health plans. Seeks advice and guidance as needed to ensure proper understanding.
4. Develops and monitors annual budgets that ensure the department has the necessary funds to carry out the goals and objectives that have been established for the department.
5. Develops, implements, monitors, and revises annual goals and objectives for the department that support the missions and objectives of Parkland. 6. Selects, trains, schedules, motivates, supervises, and evaluates employees making recommendations for disciplinary actions up to and including termination, to ensure maximum utilization of individual and group capabilities. Ensures that assigned employees receive opportunities to further their knowledge.
