Position Summary:

This position is responsible for overseeing the pastry shop along with the day-to-day activities of running the Mohegan Sun culinary operations.

Primary Duties and Responsibilities: includes but not limited to:

Hires, trains, counsels, evaluates and schedules the pastry staffSupervises food preparation, quality and cost of productsWorks with the Pastry Chef in developing concepts and productsAssists the Executive Chef in the yearly preparation of both operating and capital budgetsHelps oversees the entire Mohegan Sun culinary operations

Secondary Duties and Responsibilities:

Promotes the culinary concept in Marketing and Public Relations efforts

Minimum Education and Qualifications:

High School Diploma or equivalentSeven years of experience as a Chef in the Pastry department or as an Assistant Pastry Chef in a high volume, hospitality related food and beverage operationMust have a thorough knowledge of cost factorsExcellent written and verbal communication skillsExcellent organizational and multi-tasking skillsIntermediate knowledge of Word, Excel and Outlook

Competencies:  Incumbent will master the following competencies while in this position:

Ability to produce baked goods and pastries on a large scaleKnowledge of Mohegan Sun corporate and department policies and proceduresKnowledge of budget planning and analysis processEffective utilization of Mohegan Sun evaluation programsHas a complete working knowledge of the bake shop and all componentsKnowledge of safe and efficient operation of kitchen equipmentUnderstanding of health and sanitation guidelinesThorough understanding of the Mohegan Tribal Employment Rights Ordinance (TERO) as it relates to employment

Training Requirements:

Thorough understanding of P&L evaluation, sales forecasting, budget costs, utilization and Key Volume Indicator analysisMohegan Sun CER and purchasing proceduresKnowledge of Ascent, EmpowerTime and Manager Self Service systems

Physical Demands and Work Environment:

Fast paced kitchen environmentMust be able to stand for long periods of time with frequent lifting and bendingMust be able to lift 50 lbs.Must be able to work various shifts and flexible hours
