Executive Pastry Chef - Waldorf Astoria Doha Lusail

The Executive Pastry Chef is responsible for overseeing all aspects of the pastry and bakery department to deliver an excellent Guest and Member experience while planning production and developing seasonal offerings.

What will I be doing?

\n

As a Pastry Chef, you are responsible for operating the pastry section of the kitchen while working closely with the Executive Chef and Sous Chef to deliver an excellent Guest and Member experience. A Pastry Chef will also be required to plan production and develop seasonal offerings. Specifically, you will be responsible for performing the following tasks to the highest standards:

\n\nLead the pastry and bakery team, delivering innovative, high-quality products with consistency and attention to detail.\nSupervise and coordinate all pastry and dessert preparation and presentation\nEnsure excellent quality throughout the dessert offerings
Bring creativity to the pastry offerings\nPlan production to facilitate daily requirements\nDevelop appropriate seasonal menu offerings\nStay updated on market trends and incorporate them into WA Lusail’s offerings\nEnsure top-quality products are consistently served while maintaining cost control and profitability\nFoster a learning environment, providing coaching, mentoring, and personal development for the team\nImplement and monitor health and safety practices in collaboration with the Hygiene Manager\nOversee stock management, purchasing, labor costs, and ensure efficient kitchen operations\nMaintain policies and procedures manuals, ensuring adherence to Hilton’s hygiene, uniform, and grooming standards\nConduct daily kitchen briefings, monitor event orders, and ensure smooth communication with all departments\nDevelop and implement training programs, performance reviews (PDRs), and succession planning for team growth\nManage kitchen operations in line with SOP and HACCP guidelines, ensuring food safety and minimizing waste\nEnsure accurate recipe and costings management, including proper product handling and FIFO procedures\nBuild and maintain effective internal and external relationships\nLead by example, maintaining high standards of personal appearance, hygiene, and communication\nProvide guidance to team members and assist with administrative duties, such as scheduling and payroll\nContinuously improve kitchen operations based on reports and feedback, striving for enhanced customer service\n

What are we looking for?

Pastry Chefs serving Hilton brands are always working on behalf of our Guests and working with other Team Members. To successfully fill this role, you should maintain the attitude, behaviours, skills, and values that follow:

\n\nA minimum of 3 years as an Executive Pastry Chef\nPrior Luxury hotel experience strongly preferred\nApproaches pastry in a creative way\nHas knowledge of International Cuisine\nStrong supervisory skills\nA current, valid, and relevant trade qualification (proof may be required)\nPositive attitude\nGood communication skills\nCommitted to delivering a high level of customer service\nExcellent grooming standards\nExcellent planning and organising skills\nDedicated to the delivery of exceptional service and continuous improvement\n\n

It would be advantageous in this position for you to demonstrate the following capabilities and distinctions:

\n\nRelevant qualifications for role\nAbility to work a variety of shifts including weekends, days, afternoons and evenings\nProficiency with computers and computer programs, including Microsoft Word, Excel and Outlook\n\n
