Key Accountabilities
Coordinates and assist to lead the Kitchens and collaborates within the Food and Beverage Division and all necessary stakeholders to achieve business goals, new projects and objectives. Produces all food required for the assigned kitchens and controls the daily ordering and requisitions to meet budgeted costs. Ensures that the hotel cost control policies and procedures are followed and prevents wastage of surplus stock without undue sacrifice on food quality. Maintains up to date technical worksheets, recipes and costings and ensures understanding and compliance from team members. Hires, develops, motivates, supervises and coaches departmental employees. Develop menus for the hotel considering factors such as product availability, service cost, marketing conditions, number to be served, seasonal factors, etc. and to establish and maintain appropriate food portions with respect to the hotel’s pricing policy. Liaising with purchasing to make sure all food products purchased are the best price available.
General Requirements
Three years’ experience in similar position (Food production or related work). Fluent communication in English. Service etiquette and five-star service standards. Strong communication with staff, guests, managers and inter-personal skills. Able to work different shifts and help other F&B departments when required.
