Responsibilities will also include Storeroom management including proper storage, regular inventories and distribution of China, glass & sliver, and banquet serving equipment. This individual must work closely with the culinary team to ensure compliance with internal audits and health inspections. The Executive Steward must take an active role in the selection and training of all department associates, including preparing each person for required safety and process training. They must work closely with any 3rd party cleaning contractors to ensure that company standards are upheld, and the kitchen is prepared each day for work activity. Financial capabilities include managing payroll, maintaining proper supply inventories and putting safeguards in place to reduce breakage. What you will be doing: Complete payroll for the stewarding department. Demonstrate positive leadership characteristics, which inspire employees to meet and exceed standards. Direct staff in proper use of chemicals and supplies. Direct staff in set up, dish up and breakdown of Banquet Kitchen. Maintain work area clean and organized. Maintain and supervise cleaning program and cleanliness of work areas. Maintain control of China, glassware and silver between all food and beverage departments. Maintain sanitary kitchen, dish room and pot room operation. Maintain the dish machine in proper working condition, request for maintenance repairs through the work order system. Promote employee empowerment. Report all unsafe conditions immediately. Select, train, supervise, develop, discipline and counsel employees according to Company policies and procedures. Supervise and/or conduct inventory of glassware and supplies; maintain at established par levels. Order all ware-washing supplies. Perform in the capacity of any position supervised. Attend all mandatory meetings. What you bring to the role: High school graduate; some college is preferred. 5 years of experience managing kitchen operations in a full-service hotel Fluent in English and ability to communicate with all associates and customers Understanding ware washing techniques and organization of dish room. Previous experience developing SOP’s for stewarding operations of a full-service hotel. Certifications required for kitchen management operations. Computer skills to generate equipment orders, manage payroll, and record inventories.
