**Duties and Responsibilities**
As Fermentation Chef, I will support the Executive Chef and assume responsibility for the efficient operation in the following:
+ Stay informed of industry trends and best practices, continuously updating knowledge and skills to enhance product and service offerings.
+ Assist in various kitchen outlets as needed, supporting the Chef de Cuisines and Sous Chefs in the efficient operation of the department.
+ Contribute to the revitalization of the culinary experience, focusing on innovation and creativity.
+ Develop and maintain a monthly calendar for pickling and fermentation, ensuring consistency and quality in all processes.
+ Curate dynamic, seasonal product offerings that align with current trends and ingredients.
+ Master various fermentation techniques, including koji, lacto-fermentation, sauerkraut (salt rubbing), kimchi (paste-based), kombucha, yogurt, and more.
+ Work with tinctures, shrubs, pickles, and other preservation methods to expand the culinary repertoire.
+ Collaborate closely with the Executive Chef and Chef de Cuisine to design new products and maintain production levels across all outlets.
+ Provide support to bar teams in incorporating fermented drinks and recipes into the beverage offerings.
+ Oversee the production of fermented products for the host restaurant, ensuring quality and consistency.
+ Maintain a clean, sterilized work environment, with all equipment and surfaces kept to the highest hygiene standards.
**Qualifications**
To execute the position of Fermentation Chef, I must have the required qualifications, technical skills and experience in a similar role in luxury hotels with proven results and includes the following:
+ High school diploma or equivalent and at least 5 years kitchen experience in a full-service outlet or similar setting. Hospitality diploma/degree from a recognized hospitality school is preferred.
+ Highly skilled on the use of fermentation and kitchen equipment, meat and fish cookery and proficient knife skills.
+ Strong level of understanding of farm-to-table concept and product seasonality.
+ Alcohol awareness certification and/or food service permit or valid health/food handler card as required by local or state government agency.
+ Fluent in English; I understand that additional languages are preferred.
