Filleter
The Filleter is responsible for breaking down whole fish (Round, H&G, G&G, etc.) to the appropriate fillet specifications and meeting the set yield goals. The Filleter is an important part of the production process – providing Cutters the product needed to complete their portion goals. Once hired, you will be trained in your area of expertise to ensure your capability and understanding of safety and sanitation. You will be trained on our plant standards and you will contribute and excel in a team service environment. You will be responsible for following all company standards and guidelines, and performs opening, on-going, and closing side-work duties. ESSENTIAL QUALIFICATIONS + At least 18 years of age + Ability to communicate in verbal and written English + High School graduate/GED + Previous filleting and seafood product handling experience + Knife handling experience + A passion for great seafood product + Ability to work safely and diligently while maintaining a clean and sanitary work area + Ability to compute basic mathematical calculations ESSENTIAL JOB FUNCTIONS + Fillet whole fish for use by Cutters + Track fillet yields and weights throughout shift + Communicate with Plant Manager regarding product quality discrepancies + Gather product from all parts of the plant for use + Ability to lift up to 50 lbs; 15-20 is typical + Ability to carry up to 100 feet + Ability to reach up to 6 feet; typical is 2-6 feet
