Food & Beverage Cost Controller

Rosewood Miramar Beach, a Rosewood Hotel, is looking for an exceptional F&B Cost Controller. The Cost Controller will have an excellent understanding of food and beverage operations with an interest in ensuring costs are kept in line with budget and forecasting expectations. This position controls par levels in storerooms and oversees requisitioning of items to each outlet. This position will work with various key departments to create and maintain accurate and efficient reporting for cost analysis.
Essential Duties and Responsibilities:Sets up and controls processes for accurately receiving, storing, transferring and cross-charging items throughout the hotel. Ensure items are requisitioned properly by kitchens and outlets from main storerooms.Responsible for consolidating and placing orders; optimizing best pricing available.Sets up and controls procedures for auditing transaction, rebates, voids and discounts to prevent possible fraudulent activities.Overlooks reconciliation of House Account charges, ensures correct recharge of relevant departments.Responsible for the accurate preparation of the daily F&B Cost Reports and Revenue Reports.Follows up and verify the procedures set up for food, beverage and banquet costing established by the Management.Verifies standard recipe cost detail prepared by Executive Chef. Propose price adjustment and/or obtaining more competitive prices for ingredients. Suggests selling prices to maintain budgeted GP/COS percentages.Prepare Menu Engineering reports for all food and beverage items sold throughout the hotel. Suggests price adjustments for maximizing sales and profits.Records inter kitchen/departmental cross charges, monitors wastage, ensures accurate cost allocation to all F&B outlets.Conducts par level inventories of Food and Beverage within storerooms and coolers.Maintains cleanliness and organization of items in storerooms.Assists with Month-end routines and preparation of financial statements.Trains new associates on requisition and ordering processes.Additional tasks as required

Language: Required to speak, read and write English, with fluency in other languages preferred.
Physical Requirements:  Must be able to exert physical effort in transporting 50 pounds, endure various physical movements throughout the work areas, reach up and down, remain stationary at times throughout work periods, and satisfactorily communicate with guests and co-workers to their understanding. Qualifications:High school diploma or college is preferred.Experience:Minimum of two years’ experience in food & beverage environments; prior hotel/resort experience preferred. Culinary/kitchen experience is required. The pay scale for this position is between $25.00 and $27.00/hour. This is the pay range for this position that the Hotel reasonably expects to pay.
