Head of Catering (IDCIFM)

Secure Journeys has been selected to operate Australia’s Onshore Immigration Detention Network on behalf of the Australian Government.

 

Spotless, as a subcontractor to Secure Journeys, will be responsible for preparing and serving culturally diverse, nutritious meals contributing to the overall health and well-being of those in the centres. 

 

With the new contract commencing in early 2025, we currently have a full-time role available for a Head of Catering to join the Spotless team.

 

This role will manage the Catering Services nationally and the delivery of the National Food menu and contract obligations relating to all service delivery outcomes.

What you’ll bring

Due to the nature of the work, you must be an Australian Citizen to be considered for this opportunity and willing to be sponsored for government security and employment clearances.A Bachelor of Business or Commerce preferred.Current Food Safety Supervisor Certificate preferred.Hospitality operational service delivery at a senior management level, with strong people leadership and management skills.Extensive knowledge of food services and relevant food products.Knowledge of statutory obligations under Food Safety Standards and Hazard Analysis Critical Control Points (HACCP) Program.Budget management Experience.

The role has a broad remit, with key responsibilities outlined below:

Continual development of the National Menu Plan database ensuring an extensive database of recipe cards that detail the recipe, ingredients, nutritional value and method of cooking of the meals provided to Detainees, for lunch and dinner services.Ensure the National Menu Plan, and any changes, are developed, reviewed and approved by a Dietician for nutritional input.Maintain for the Term of the Contract a registered and certified Food Safety Plan under the relevant State health department at each Facility based on Hazard Analysis and Critical Control Point (HACCP) requirements in the certified State Health Department format.Ensure the registered Food Safety Plan remains in accordance with all applicable Laws, and the Australia New Zealand Food Standards Code.Manage the national program of operations food compliance including internal and external audits to ensure effective and continued compliance with HACCP standards and regulations and applicable procedures from our integrated management system.
