JOB OVERVIEW:

Follow instructions concisely to provide quality service in all areas of food production for menu items and specials in the designated outlets in accordance with standards and plating guide specifications.  Maintain organization, cleanliness and sanitation of work areas and equipment.


REPORTS TO:          

Executive Sous Chef


WORK ENVIRONMENT:

Main Kitchen, Outlet Kitchens, Stewarding areas.

Job involves working:

under variable temperature conditions (or extreme heat or cold).under variable noise levels.outdoors/indoors.around fumes and/or odor hazards.around dust and/or mite hazards.around chemicals.QUALIFICATIONS

Essential:

High School Diploma or equivalent1-2 years related restaurant experience preferred which demonstrates a working knowledge of cooking techniques, preparation, storage and sanitation. Ability to prepare food from a recipeGeneral knowledge of food sanitation and safety Understand guest service needswork cohesively with co-workers as part of a team

 

ESSENTIAL JOB FUNCTIONSSet up line equipment for service.Organize and prepare menu items. Know and prepare for Banquet Event Orders as directed.Create daily prep list to maintain misen place for anticipated levels of business.Communicate with Sous Chefs and Prep Cooks when extra help is needed to meet deadlines.Break down and clean line, change pans, utilize product wisely at the end of service, eliminate waste and rotate product.Report for work on time and in uniform.Maintain good personal hygiene, and practice food safety handling as required by the Virginia Health Department.Work effectively with others in a spirit of cooperation. Display a “Guest First” attitude, and the 10-5-3 rule.Overall responsibility for the cleanliness of work station, this includes all equipment used in the performance of work.Clean and sanitize work areas, equipment, utensils, dishes, and silverware.Store food in designated containers and storage areas to prevent spoilage.Remove trash and clean kitchen garbage containersUnderstand and maintain the standards, values and goals of Tides Inn.Complete any special assignments from ChefsPerform a variety of food preparation duties other than cooking, such as preparing cold foods and shellfish, slicing meat, and brewing coffee or tea.
