Job Description
Responsibilities
· Schedule, direct, and supervise the activities of the employees of the Rosenthal Center and serve as building proctor.
· Maintain and monitor HACCP, SSOPs, the E-Coli Plan, and all food safety records, as well as records of yields, costs, disposition, and sale of animals, carcasses, meat products, and dairy products processed and sold at the Rosenthal Center.
· Assist graduate and undergraduate students in planning, scheduling, and conducting teaching and/or research activities.
· Cooperate with scientists in conducting experiments that involve the Rosenthal Center.
· Cooperate with AgriLife Extension specialists to conduct short courses, field days, result demonstrations, etc., that involve the Rosenthal Center.
· Procure livestock, meat products, and supplies needed for the functions of the Rosenthal Center.
· Serve as the liaison between Animal Science and the State of Texas Department of Health Cooperative Meat Inspection Division.
· Participate in slaughter, cutting, fabrication, curing, smoking, and processing activities.
· Assist persons who are involved with the meat industry with solutions to problems and with access to Rosenthal Center facilities.
· Collect or supervise the collection of slaughter, grade, cutability, or processing data for teaching activities and cooperative projects.
· Assist in monitoring the use of equipment and personnel operations for compliance with safety procedures and in inspecting facilities for any hazardous conditions.
· Assure that public relations with clientele, customers, project sponsors, and cooperators are of a nature that will engender favorable individual responses and a desirable public image.
· Stay abreast of changes in science and technology related to Meat Science.
· Serve as host and tour guide for visitors of the Rosenthal Center.
· Perform other job-related duties as required.
Required Education and Experience
· Bachelor's degree in Animal Science or equivalent combination of education and experience.
· Five years of related experience in the meat industry, either in an institutional or commercial environment, including related supervisory experience.
Preferred Education and Experience
· Master's degree in Animal Science or equivalent combination of education and experience.
· Five years of related experience in the meat industry, either in an institutional or commercial environment, including related supervisory experience.
Required Knowledge, Skills, and Abilities:
· Working knowledge of database, spreadsheet, presentation, and word-processing software programs.
· Excellent verbal and written communication skills.
· Ability to plan and organize effectively.
· Ability to multitask and work cooperatively with others
