Description:
Summary:
As the Cafe Kitchen Manager, you are responsible for the operational direction and administration of activities within the kitchen and the back of the house. Such activities include but are not limited to controlling labor and expense costs, achieving the specified sales and labor margins, and maintaining the highest quality of food. Additionally, your strong leadership skills will guide the kitchen team with the development and execution of operational plans.
Essential Functions and Responsibilities:
+ Hire, train, develop, measure performance, discipline, and schedule department staff
+ Lead the tactical execution of strategic initiatives under the direction of division leadership
+ Establish standards of service within assigned department(s) and ensure achievement
+ Manages kitchen on respective shift and works all stations as needed
+ Oversees all food preparation, production, and assembly of food menu items by following recipes and yield guides
+ Arrange orders for daily and upcoming events, ensuring proper usage of all food items
+ Checks freshness and quality of food and maintains adequate inventory levels
+ Formulates training outlines as needed for job standards to ensure all employees understand and have the skills to provide quality food and dish presentations
+ Orders and maintains all food and beverage supplies, ensuring proper expense controls expense controls
+ Responsible for transporting goods and materials between properties, ensuring timely and safe delivery while maintaining the integrity of all items
+ Creates new menu items and recipes and assists in determining the cost of items
+ Ensures that the restaurants are clean, organized, and properly functioning and that restaurant equipment is maintained
+ Ensures health, safety, and sanitation standards are always followed, in compliance with company and health department standards and regulations
+ Ensure compliance with all applicable gaming laws and company internal controls, policies and procedures, Title 31, and federal regulations, if they apply to the position
+ Provide outstanding guest service in a timely manner to both guests and fellow team members that meets the company’s guest service culture standards
+ Perform other duties as assigned
Requirements:
Qualifications
+ Minimum of 3 years of food & beverage management experience preferred
+ Previous experience in overseeing kitchen operations
+ Experience using collaborative leadership and team building techniques to develop and facilitate a positive work culture
+ Knowledge of knife skills, basic understanding of kitchen equipment, and operation of kitchen equipment
+ Proven experience in food cost controls by expanding and condensing food recipes
+ Proven knowledge to plan, develop, recite, promote and execute a variety of menu items and standard food recipe as requested
+ Proven experience providing a high level of guest service
+ Ability to access and input information using a moderately complex computer system
+ Ability to accurately perform basic math skills for measurements of recipes
+ At least 21 years of age
+ High School Diploma or equivalent required
+ Ability to effectively communicate in English, both written and verbal
+ Obtain and maintain all work cards as required by the company
+ Verify right to work in the United States

Physical Requirements
+ Frequently push/pull up to 75 lbs.
+ Frequently lift and/or carry up to 75 lbs. at floor, knee, waist, and chest levels

+ Occasionally sit and work at a desk or computer
+ Frequently standing and walking
+ Ability to communicate using in-person speech, radios, and telephone
+ Ability to hear, understand, and distinguish speech and/or other sound in person

+ Ability to use tools or kitchen equipment requiring a high degree of dexterity
