Job DescriptionTo provide properly cooked and presented food in any outlet, commissary or banquet production.
Responsibilities Assume responsibility of production in the absence of the Executive Pastry Chef and Assistant Pastry Chef and Pastry SupervisorVast experience in specialty cakes and desserts, wedding cakes, and chocolate sculpturesAssist with Bakery as needed, but have a vast knowledge and ability to assume complete responsibility as neededKnowledge of ordering products and maintaining food costKnowledge and ability to assist with sugar sculptures and cooking demosPrepares all food items according to standard recipes and/or as specified on guest check to ensure consistency of product. Visually inspects, selects and uses only food items ideal cooking, in preparation of all menu itemsChecks and controls the proper storage of product, monitor age and condition of all food items to rotate and maintain highest quality. Keeps all refrigeration equipment, storage and working areas clean and clutter free, complying with health department regulationsPrepares daily requisitions for supplies and food items for productionReads and employs math skills to follow recipesEnsure all equipment is clean and in working conditionVisually inspects, selects and uses only the freshest food products of the highest standard in preparation of all menu itemsMaintain the highest quality and appearance of all foods sent from kitchen and make sure plates/buffet presentations are clean and appetizing.Maintain proper pars of production and mise en place. Label and date all foods.Solely responsible for maintaining clean work station. Make sure all work areas are properly cleaned at end of shift and at end of evening.Recognize a deficiency with a dish and makes correctionsMeasures and mixes ingredients to form dough or batterShapes dough for cookies, pies and pastriesRegulates oven temperatures for cookingPrepares and cooks ingredients for pie fillings, puddings, custards and other dessertsMixes ingredients for icingDecorates cakes and pastries, blends sugar and icingsTools and Equipment:
