The Prep Cook ensures the highest quality food is prepared per the exact recipe specifications at all times. The Prep Cook is responsible for all aspects of their assigned station, completes all items on the daily preparation list, and assists the Cooks to ensure the stations are stocked with basic, critical items throughout the shift. The Prep Cook is responsible for cleaning, sanitizing, maintains equipment, utensils and tools.
Essential Duties and Responsibilities include the following. Other duties may be assigned.
Complete assigned prep work to stock and set up stations.Prepare cold food sandwiches, salads and dressing.Basic vegetable prep, slicing dicing and proper handling.Preparation and handling of meat, fish, starches and vegetables.Basic hot food preparation.Learn and work basic frying, grilling, baking roasting and poaching techniques.Maintain recipe cards and documentation.Properly execute all recipe procedures.Inspect food preparation and temperatures ensuring consistency and quality.Maintain soup schedules.Assist others as needed, contributing to a teamwork environment.In house training to operate machineries such as Power Mixers, Slicer, Emulsifier, Steamer etc. upon completion of training with culinary management: documented with signature sheets.Assist with banquets and special events.Learn and maintain FIFO standards for coolers, dry storage for all stations.Clean and care for cooking surfaces, refrigerators and store all equipment.Report all faulty equipment or unsafe conditions to supervisor.Comply with all Cache Creek Casino Resort safety, health & sanitation policies & procedures.Supervisory Responsibilities

Qualifications

Education and/or Experience
Willingness to learn, train, and grow in the culinary field.
Age Requirement
Must be at least 18 years of age.
Language Skills
Ability to read and comprehend simple instructions.
Mathematical Skills
Ability to add, subtract, multiply, and divide in all units of measure, using whole numbers, common fractions, and decimals.
Reasoning Ability
Ability to apply common sense understanding to carry out detailed but uninvolved written or oral instructions. Ability to deal with problems involving a few concrete variables in standardized situations.
