The Server Captain is responsible for promoting and ensuring guest satisfaction, maintaining service standards and sequence of service, monitoring service timing and communicating timing to kitchen. Responsible for a safe and sanitary work environment. Work in unison with chefs to maintain the highest quality products and production. Establishes rapport with guests to build guest loyalty and gather constructive feedback to ensure satisfaction of every individual guest.
Previous Fine Dining experience preferred. Above average knowledge of food identification, food preparation techniques and flavor profiles. Above average knowledge of wine varietals, wine growing regions, viticulture techniques and varietal flavor profiles. Certification through Court of Master Sommeliers preferred. Above average knowledge of Liquor and Libations, ability to perform in a bartender role as needed. Familiarity with MICROS or POS Touch-base systems. Excellent written and oral communication skills. Ability to work flexible schedule to include weekends and holidays. Ability to work under pressure with a high degree of attention to detail. Ability to organize and prioritize guest service needs. Be poised and professional in appearance and attitude. Must read, write, and speak English. High School Diploma or GED preferred. Food Handlers Certificate. TIPS Certified. RBS Certifications.Essential Job Functions:
Work as part of a highly skilled team to provide Michelin Star service. Exceptional understanding of the personalized guest experience. Maintain the highest levels of personal grooming and hygiene. Maintain the highest level of personal appearance standards. Full knowledge of menu, item descriptions and preparation method. Full knowledge of spirits, origins, flavor profile and common usage. Full knowledge of brewed items to include seasonal craft selections. Full knowledge of wine service, from selection to presentation to service. Above average knowledge of wine varietals, wine growing regions, viticulture techniques and varietal flavor profiles. Identify select cutlery for each course and preset in unison. Identify glassware to use for select wine spirits and beer. Perform decanting procedure with vintage wines. Perform Bartending functions as needed from In Room Martini Cart. Maintain the integrity of the restaurant by identifying and reporting any maintenance or health/sanitation issues. Perform all opening, closing and service side work, to include polishing of glassware and silver, maintenance of tableware, folding napkins and linens. Perform cashier functions, to include cash handling, discounts, privilege point and comps. Perform closing duties, including restocking items securing product and service wares.
