DescriptionThe incumbent in this position is responsible for a Italian Specialty kitchen and ensures that it runs according to performance standards established by the Executive Chef according to the Kempinski procedures and standards. To prepare dishes and specialty dishes as per the menu for all outlets, while maintaining standards of food preparation, quality, hygiene, sanitation and decoration in accordance with HACCP.
Key Responsibilities\nPrepare kitchen equipment for use. \nAssemble and prepare ingredients for menu items.\nPrepare simple food items. “mis-en-place”\nAssist with checking, receiving and storing of goods.\nAssist with organizing special events and special food promotions.\nMaintain comprehensive product knowledge including ingredients, equipment, suppliers, markets, and current trends and make recommendations for appropriate adjustments to kitchen operations accordingly.\nMaintain a hygienic kitchen and personal hygiene.\nAssist in training needs analysis of Kitchen staff and ensure training programs are designed and implemented to meet needs.\nWork with superior in the preparation and management of the department’s budget.\nDemonstrate Awareness of OH&S policies and procedures and ensure all procedures are conducted safely and within OH&S guidelines and ensure your direct reports do the same.\nBe familiar with property safety, first aid and fire and emergency procedures and operate equipment safely and sensibly.\nInitiate action to correct a hazardous situation and notify supervisors of potential dangers.\nAdditional responsibilities and tasks can be added at any time according to the needs of the business and of the hotel.\n
Job Requirements \nMinimum of 1 to 2 years’ experience in a similar position\nPreferably in an international, luxury five-star hotel \nEnglish & Italian - excellent communication skills\nMust have experience in Italian cuisine \n
