We currently have an opportunity for a passionate and creative Sous Chef to join our team at the Perth Convention and Exhibition Centre (PCEC). Working closely with the Executive Sous Chef, you will oversee and supervise the preparation of all meals within the kitchens.  This includes, but is not limited to production of breakfast, dinner, function catering, theme meals and other catering as is required to fulfil the contract specifications and meet client expectations.

What you’ll do

The role has a broad remit, with key responsibilities outlined below:

High quality production and preparation of both hot and cold food items in adherence to relevant standards. Ensure that all food items are appropriately displayed to customers. Plan and develop recipes and menus. Oversee and supervise staff in the performance of duties ensuring safety standard, procedures and policies are obeyed and utilised continuously. Supervising budget expenditure within the kitchen, ordering food and consumables related to meals and reporting to the Executive Sous Chef on any issues likely to impact on service delivery or budget expenditure. Perform other duties, as may be required, to ensure all mandated services are delivered as per the scope of the contract.  This could include but not be limited to administration duties and cleaning duties.

What you’ll bring

Qualified career orientated Chef with a proven knowledge of kitchen operations. Experience cooking in a commercial kitchen, preferably with staff supervision Experience working in a fast-paced environment and with proven capacity to work well under pressure and to strict service timelines.  Knowledge of food safety procedures Proven experience planning and developing menus (preferred) Proven experience working with budgets and profit / loss reports Confidence and leadership that is inspiring in teams Experience and the ability to run large functions / events.
