Sr Mgr Exec Chef Pastry - Rivea

THE JOB:
 As the Executive Pastry Chef at Rivea, you will bring your culinary vision and leadership to a vibrant kitchen inspired by the flavors and ingredients of the French and Italian Riviera. In this role, you’ll oversee all aspects of pastry operations, ensuring exceptional product quality and guest satisfaction. From creating innovative menus to managing a skilled team, your work will enhance the guest experience at Rivea, set against the stunning views of the Las Vegas Strip.
 THE DAY-TO-DAY:Lead daily pastry kitchen operations, including budgeting, labor productivity, scheduling, inventory control, and guest service standards.Review and execute upon Banquet Event Orders (BEOs), Special Event Orders (SEOs), and Group Event Orders (GEOs) to ensure seamless pastry delivery.Manage menu development and execution, bringing creativity and innovation to the dessert and pastry offerings, while ensuring profitability and cost control.Oversee compliance with health, sanitation, and cleanliness standards across the pastry kitchen.Lead human resources responsibilities, such as hiring, training, coaching, and developing a diverse team.Represent the pastry kitchen in property and corporate meetings, ensuring alignment with broader F&B initiatives.
 THE IDEAL CANDIDATE:Bachelor’s Degree from an accredited Culinary Institute or 4 years of equivalent experience working within a professional pastry kitchen within the hospitality environment.2 or more years of prior experience in a high-volume pastry kitchen or fine dining establishment.Demonstrated expertise in menu development, recipe creation, and cost management.Experience with handling high-volume Group Event Orders (GEOs)Experience leading pastry operations in a luxury hotel or resort setting, with a focus on French or Italian cuisine.Proven ability to manage fiscal budgets, inventory control, and labor productivity while maintaining guest service standards.Creativity and a passion for developing innovative dessert menus that showcase seasonal ingredients.Experience working in a unionized environment and familiarity with collective bargaining agreements.
