As **_Alcoholic Beverage Innovation Application Intern_** , you will be part of the global innovation team working on alcoholic drinks.
Under supervision of the Senior Application Manager, you will collaborate with Flavorists and Flavor Technologists to develop a range of application bases for alcoholic and non-alcoholic wines.
You will contribute to the design of new flavoring solutions, and you will be instrumental in shaping and reviewing our technical capabilities for wine. You will occasionally help and support the team in day-to-day application activities linked to pipeline projects.
This internship is for 6 months minimum and you will need to still be a student.
**YOUR KEY RESPONSABILITIES:**
Collaborate with cross-functional teams and external partners/suppliers to:
+ Understand flavor opportunity in wine-containing beverages (in collaboration with our Regulatory team)
+ Scope the range of ingredients usable in wine-based applications and understand the impact on market product labelling
+ Order and evaluate ingredients usable in wine-containing beverages. Identify suitable suppliers, use levels in application and run appropriate stability testing when needed
+ Gather suppliers contact details and create a ‘wine ingredient supplier database’
+ Organize market product tasting sessions with the technical team
+ Design a range of application bases for flavor/ingredient screening and stability testing
+ Evaluate performance in application of new flavor creation for wine
+ Evaluate existing range of enzyme and yeast and assess impact on taste, fermentation reduction or enhancement
Perform an exhaustive stability review, including:
+ Literature review on stability/degradation processes of wine, non-alc wine and wine-based beverages
+ Run standard beverage analysis (Brix, density, % ABV, TA, pH) on a selection of NA and alcoholic wines. Centralize data in databases
+ Creation of a stability protocol for wine, NA wine and any other relevant wine-based beverages
+ Stability testing of existing ingredients and flavor solutions for wine-containing beverages
Centralize & spread technical knowledge:
+ Gather technical data related to wine processing, ingredients, wine shelf life, … and generate educational documents (presentation/report) to fuel future technical trainings related to wine application
Support the Sr Application Manager and Lead Application Specialist in day-to-day application activities (when needed):
+ Perform routine beverage analysis
+ Produce beverages to support sensory testing and customers’ requests
+ Participate to maintaining the application lab in clean and safe conditions

**YOU BRING**
+ Bachelor or Master’s (preferred) degree in Food Science, Food Technology, Agronomy, Oenology, or related area
+ Strong analytical thinking, rigorous and well organized as well as strong sensory skills in organoleptic and olfactory test
+ Strong knowledge of winemaking and vine-growing processes, oenology and quality control relating to grape production. Knowledge of wine-products marketing and wine organoleptic chemistry are a plus
+ Previous experience in working in a laboratory, QC or in beverage development are a plus
+ Computer proficiency especially in MS pack (PowerPoint, Excel, Word, Teams, Outlook, …)
+ Proficiency in both French and English. Must be able to present and write reports in English
